Brownie Cookie with Spicy Ganache Recipe | Elijah's Xtreme
2 cups semisweet chocolate chips
3 Tbsp unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp instant espresso powder
1 tsp vanilla extract
3 large eggs
1 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp kosher salt
1/4 cup heavy cream
1/2 cup dark chocolate
3/4 tsp Elijah's Xtreme Ghost Pepper Hot Sauce

Directions for Cookies:
Simmer 1 inch of water. Place 1 cup semisweet chocolate chips and butter in a heatproof bowl and place the bowl over the water. Melt until mix is smooth and remove from heat.
In a small bowl, whisk flour, baking powder and salt.
In a large bowl, whisk both sugars, espresso powder, eggs and vanilla. Add chocolate mix to sugar mix and whisk until smooth.
Gently fold the flour mix in the chocolate mix until combined. Fold in the chocolate chips.
Cover dough and refrigerate for at least 4 hours. Once refrigerated, preheat oven to 325F, lay parchment paper on a baking sheet and lightly coat with cooking spray and flour.
Drop 1 inch cookies on the baking sheet and bake for 13 minutes. Let cookies rest for 5 minutes when done.
Directions for Ganache:
Heat heavy cream in a saucepan over medium heat until hot.
While cream is heating, add chocolate, and Elijah’s Xtreme Ghost Pepper Hot Sauce in a small bowl. Pour hot cream over mix and let rest for 3 minutes.
Stir the mix until chocolate mix is melted and smooth.
Drizzle ganache over cooled cookies. Serve and enjoy!
