Ingredients
1/3 cup nonfat sour cream
2 Tbsp crumbled blue cheese
1 Tbsp skim milk
2 tsp mayo
Salt and pepper to taste
2 Tbsp unsalted butter
1/4 cup Elijah's Xtreme Original Roasted Pepper Sauce
1 Tbsp lemon juice
2 Tbsp olive oil

8 cups cauliflower florets

Directions
Preheat oven to 400F.
For cheese sauce, whisk sour cream, milk, mayo, salt and pepper into a bowl. Cover and refrigerate for about 30 minutes.
For the cauliflower, microwave butter until melted and then whisk Elijah's Xtreme Original Roasted Pepper Sauce and lemon juice. Set aside.
In a large bowl, mix olive oil, salt and 1/2 cup water.
Add the cauliflower and toss until well coated.
Spread the cauliflower on a baking sheet and roast for about 20-25 minutes until they're starting to brown and get tender.
Whisk the hot sauce mixture again and drizzle over the cauliflower and toss.
Roast cauliflower for about 5-7 minutes more.
Serve with cheese sauce and enjoy!
