It's officially becoming grilling season again and we are here for it! Check out this delicious smoked pork butt recipe made by Tim!
5 Chipotle peppers, pureed
2 cups pineapple juice
1/3 cup sugar
1/3 cup honey
2 Tbsp Elijah's Xtreme Original Roasted Pepper Hot Sauce
1/3 cup apple cider vinegar
In a pot, add 1 1/2 cups pineapple juice, sugar, honey, Elijah's Xtreme Original Roasted Pepper Hot Sauce, and apple cider vinegar. Bring to a boil and simmer for 10 minutes. Inject it into every side of the pork butt.
Rub oil on the pork and score the meat and go through the fat so the smoke can penetrate the meat. Make long cuts diagonally down and then across.
Season the outside of the pork butt with salt, pepper, garlic powder, onion powder, and paprika.
Blend up 5 chipotles and 1/2 cup pineapple juice. Transfer the pork butt to a large tin and rub the chipotle pineapple mixture all over. Let marinate for 6-12 hours or overnight.
Once marinated, smoke the pork at 275F and every hour spritz it with pineapple juice. When the meat reaches 185F internal temp. place it in a tin and cover with foil until the internal temp. reaches 206F-209F
Let rest for 1 hour and then shred. Serve however you like and enjoy!
