This is the ultimate comfort food, juicy roast, roasted potatoes and soft carrots made better by adding Elijah's Bourbon Blueberry BQQ. You won't be disappointed by this meal!

Ingredients
1 1/2 Tbsp olive oil, divided
3 lb chuck roast
Salt and pepper
Elijah's Xtreme Bourbon Blueberry Chipotle BBQ Sauce
1 medium yellow onion
5 garlic cloves ( 1 1/2 Tbsp)
1 1/4 cups beef broth
2 tsp Worcestershire sauce
1 Tbsp minced thyme
1 Tbsp minced rosemary
2 1/2 lbs small gold potatoes
5 medium carrots
2 1/2 Tbsp cornstarch mixed with 3 Tbsp beef broth
2 Tbsp chopped parsley
Directions
Heat 1 Tbsp olive oil in a large pot on medium-high heat. Dab roast dry and season with salt, pepper and Elijah’s Xtreme Bourbon Blueberry Chipotle BBQ. Sear roast in pot for about 4-5 minutes per side. Move roast to crock pot.
Add remaining ½ Tbsp olive oil to pot. Add onion and cook for 2 minutes, add garlic, cook for 30 seconds. Pour in crock pot.
Layer potatoes and carrots in crock pot then pour in beef broth, worcestershire, thyme and rosemary. Season again with salt and pepper.
Cover crockpot and cook on low heat for about 8-9 hours.
Remove roast and vegetables, discard fat off the roast and cut potatoes if desired.
Plate roast, pour sauce over, and sprinkle with parsley. Serve and enjoy!
