Ingredients
6 lb salmon, skin removed, pin boned
5 1/2 Tbsp salted butter, at room temp
Elijah's Xtreme Original Roasted Pepper Hot Sauce
6 garlic cloves
1 lemon rind, finely grated
2 Tbsp chopped parsley
1 Tbsp chopped chives
1/2 cup plain flour
2 eggs, lightly whisked
4 cups panko breadcrumbs, lightly toasted
Lemon wedges, to serve
Directions
Place butter in a small bowl. Add Elijah’s Xtreme Original Roasted Pepper Hot Sauce, garlic, lemon rind, parsley, and chives and stir with a fork until combined. Shake into a log approximately 15cm long and 2.5cm wide. Wrap in plastic wrap. Place in the freezer until required.
Line a baking tray with foil. Use a sharp knife to make a long, cut through the thickest part of the filet, making sure not to cut all the way through. Trim the garlic butter log to the same size as the cut in the salmon. Reserve the rest of the butter log. Gently push the log into the cut, being careful not to tear the salmon.
Place flour on a plate. Place eggs in a shallow dish. Place panko on another plate. Dip salmon in flour, the egg, then panko, pressing gently. Place on the prepared tray, spray with oil.
Bake at 325F for 30-35 minutes or until cooked to your liking.
Melt any reserved garlic butter in a small saucepan over medium heat. Drizzle over the salmon. Top with parsley and chives.
Serve with lemon wedges and enjoy!
