This is the healthiest and easiest fried rice recipe you'll find! Not to mention you only need 1 pan and an oven, this will be a fan favorite!
One Pan Baked Fried Rice Recipe | Elijah's Xtreme
1 1/2 cups brown rice
2 garlic cloves, crushed
2 tsp grated ginger
2 1/2 cups boiling water
2 tsp vegetable oil
2 carrots, peeled and grated
1 cup frozen peas
1/4 lb sliced ham
3 green shallots, white and pale green parts thinly sliced (Tops reserved)
2 Tbsp light soy sauce

Preheat oven to 400F. Place the rice in a baking dish. Add garlic and ginger. Pour in water and oil. Stir to combine. Cover dish tightly with foil and bake for 45 minutes.
Carefully uncover the dish and stir in carrot, peas, ham, shallots, and soy sauce. Cover tightly and cook another 10 minutes.
Remove and discard foil. Make 3 indentations in the rice mix and break an egg into each. Use a fork to lightly whisk egg with mixing into the rice. Return to the oven and cook, uncovered, for 7 minutes.
Use a small knife to coarsely cut the eggs and stir to combine. Diagonally slice the reserved shallot tops and sprinkle over rice mixture.
Serve drizzled with soy sauce and Elijah’s Xtreme Ghost Pepper Hot Sauce.
