Pad Thai is stir fried rice noodles, mixed with chicken, shrimp and Elijah's Pineapple Mango Hot Sauce. This is a delicious, sweet and spicy dish that you'll want to make over and over again!

Ingredients
250g packet of rice stick noodles
2 Tbsp lime juice
2 Tbsp fish sauce
2 Tbsp brown sugar
2 Tbsp peanut oil
2 chicken breasts
1 1/2 lb peeled and deveined prawns or tiny shrimp
3 green onions, thinly sliced
4 Tbsp Elijah's Xtreme Pineapple Mango Habanero Hot Sauce
2 eggs, lightly beaten
1 cup bean sprouts, tails removed
1/4 cup roasted peanuts, finely chopped (optional)
1/2 cup coriander leaves
Lime wedges, to serve
Directions
Place noodles in a heat proof bowl. Cover with boiling water, leave until tender and rinse under cold water.
Combine lime juice, fish sauce, and sugar in a jug. Whisk with a fork.
Heat a wok over high heat. Add oil, chicken. Stir fry for 2 minutes until golden. Add prawns (or shrimp), onions, and Elijah’s Xtreme Pineapple Mango Hot Sauce. Stir fry for 2-3 minutes. Add noodles, stir fry for 2 minutes.
Add lime juice mixture. Toss to combine and slowly pour eggs over noodles. Stir fry for 1 minutes. Add sprouts, toss well to mix.
Plate the pad thai and sprinkle peanuts and coriander leaves. Serve with lime wedges and enjoy!
