Ingredients
1/3 cup baby spinach
1/2 cup cooked quinoa, warmed
1 soft-boiled egg, peeled and sliced
1/4 avocado, sliced
1 tsp extra virgin olive oil
2 tsp chopped roasted unsalted almonds

Directions
Place spinach in a strainer. Pour over boiling water. Use clean hands to squeeze any excess liquid from the spinach.
Arrange quinoa, spinach, egg and avocado in a serving bowl. Drizzle over olive oil and Elijah’s Xtreme Pineapple Mango Habanero Hot Sauce.
Top with almonds, serve and enjoy!
