Ingredients
1 lb russet potatoes, cut 1 1/2 cm thick
1 Tbsp cajun seasoning
2 Tbsp olive oil
1 lb flank steak
Small bunch of coriander, finely chopped
1/4 small red cabbage, shredded
1/2 red onion, finely sliced
2 Tbsp mayonaise
1 Tbsp sour cream
1 tsp Elijah's Xtreme Regret Hot Sauce
Directions
Preheat oven to 400F. Bring a large pot of salted water to boil, add the potatoes and cook for 5 minutes. Drain and leave to steam dry in the colander for a few minutes. Toss potatoes with cajun seasoning, half the oil and a good pinch of salt. Put on a baking tray and roast for 25-30 minutes, flipping halfway through.
To make the slaw, combine the cabbage, onion, mayo, sour cream and Elijah’s Xtreme Regret Hot Sauce, mix until well coated. Set aside.
Rub the steak with remaining oil and season both sides. Heat a pan over high heat. Add steak to the hot pan, cook for 2 minutes on one side, then 3 minutes on the other. Remove, put on a cutting board, cover with foil and let rest for 5 minutes. Slice into strips.
Serve steak, potatoes, and slaw on a plate and enjoy!
