Ingredients
1 1/2 lbs gold potatoes
7 Tbsp unsalted butter
1/2-3/4 cup buttermilk
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
6 slices bacon
2 Tbsp Elijah's Xtreme Carolina Reaper Hot Sauce
4 scallions
4oz blue cheese crumbles
Directions
Cut potatoes into large chunks and place in a large pot. Fill with cold water and set over medium heat. Bring to a boil and cook for about 15-20 minutes or until fork tender.
Cook bacon in a skillet for about 8-10 minutes. Drain all the grease and return to the skillet. Add butter and slowly pour Elijah’s Xtreme Carolina Reaper Hot Sauce in and stir well. Remove from heat.
Once potatoes are done, drain and return to pot. Add 4 Tbsp of butter and buttermilk to reach your desired consistency. Mash potatoes until smooth. Season with garlic, salt, and pepper.
Move potatoes to a serving dish and add more Elijah’s Xtreme Carolina Reaper Hot Sauce on top. Top with bacon, scallions and blue cheese crumbles. Add more salt and pepper if needed.
