Ingredients
1 lb ground pork
3 tsp finely grated parmesan
1/4 cup dried breadcrumbs
1 egg
2 tsp fresh thyme leaves
1/3 cup flaked almonds
1 garlic clove, crushed
Elijah's Xtreme Carolina Reaper Hot Sauce
1 Tbsp olive oil
Juice from 2 large oranges
1/4 cup pure maple syrup
2 Tbsp balsamic vinegar
3 fresh thyme sprigs
1 packet kaleslaw mix
2 cups baby spinach
Directions
Place ground pork, orange rind, breadcrumbs, eggs, thyme leaves, half the almonds, half the garlic, and a few splashes of Elijah’s Xtreme Carolina Reaper Hot Sauce in a large bowl. Season and mix well. Roll 1 Tbsp full of the mixture into a ball. Repeat with the rest of the mixture.
Over medium heat, heat half the oil in a large frying pan. Add the meatballs and cook, turning occasionally for 6-8 minutes. Transfer to a plate.
Add remaining garlic to the pan. Cook, stirring for 30 seconds. Add orange juice, maple syrup, 1 ½ Tbsp vinegar and thyme sprigs. Simmer for 1 minute. Season. Return the meatballs and remaining almonds to the pan. Toss to coat.
Drizzle kaleslaw mix and spinach with the remaining olive oil and vinegar. Season and toss to combine. Divide among serving plates and then add meatballs.
Sprinkle with toasted almonds, serve and enjoy!
