Ingredients
1 1/2 cups flour, plus extra for dusting
1/2 cup butter (1 stick), chilled and diced, plus extra for the tin
1 medium egg
1 vanilla pod, seeds scraped (or 3 tsp vanilla extract)
2/3 cup jam or marmalade of your choice + Elijah's Xtreme Carolina Reaper Hot Sauce
Directions
Put the flour, butter and a pinch of salt in a bowl and rub together with your fingers. When the mixture looks and feels like fresh breadcrumbs, stir in the egg and vanilla seeds. Add 1 Tbsp cold water, then start to bring the dough together in one lump, trying not to knead it too much. Add 1 more Tbsp of water if it’s not coming together. Wrap in cling film and chill in the fridge for 30 minutes.
Heat oven to 400F. Butter a 12-hole tart tin, then dust your work surface with flour. Unwrap and roll out the chilled pastry until it’s about as thick as 2 quarters, then use a straight round cutter to cut out 12 circles big enough to line the holes in the tin. With excess dough, make little hearts to go on top of the jam.
Mix Elijah’s Xtreme Carolina Reaper Hot Sauce with jam of your choice and dollop 1-2 tsp into each of the tins. Then top with a dough heart.
Bake for 15-18 minutes. Leave to cool in the tin for a few minutes then carefully transfer to a wire rack.
