A Xtremely and insanely spicy burger that will be perfect for someone who likes the heat!

Ingredients
1 3/4 lbs lean ground beef
Olive oil
1 large purple onion
1 splash of white wine vinegar
2 large pickles
4 brioche burger buns
4-8 slices of bacon
4 tsp yellow mustard
Elijah's Xtreme Regret Sauce
4 slices of pepper jack cheese
4 tsp ketchup
1/4 of head of iceburg lettuce
2 Tbsp mayo
1 Tbsp ketchup
1 tsp Elijah's Xtreme Regret Sauce
1 tsp Worcestershire sauce
Optional: 1 tsp brandy or bourbon

Directions
Divide beef into 4 and roll each piece into a ball. Press into flat patties about 5 inches wide. Place on a plate and chill in the fridge.
Thinly slice the red onion then put in a bowl with the vinegar and a pinch of salt.
Slice pickles and halve the buns.
Thinly chop the lettuce and mix with the other burger sauce ingredients, then season to taste.
Grab 2 pans, one on high heat for the burgers and another on medium heat for the bacon. Pat the burgers with oil and lightly season with salt and pepper. Put 2 burgers in the pan, pressing down on them with a spatula and then put half the bacon in the other pan.
After 1 minute, flip the burgers and brush each cooked side with ½ tsp mustard and a dash of the Xtreme Regret Sauce. After another minute, flip again and brush the other side with the same mix. Cook for 1 more minute and place the bacon on top and then a slice of cheese. Repeat for other burgers and the rest of the bacon.
Toast the buns in the bacon fat until lightly golden.
Lay the buns out and on one side add a quarter of the burger sauce, then top with the cheesy bacon burger, a quarter of the onions and the pickles. Rub the other side with ketchup and close. Serve and enjoy!
