These cauliflower nachos were made by Alex (tiktok: @healthywithalex). They're a twist on classic nachos by substituting the chips for cauliflower and adding the Pineapple-Mango Habanero sauce to give it a little extra sweet and spiciness.

Ingredients
1 Tbsp Elijah's Xtreme Pineapple-Mango Habanero Sauce
1 head of cauliflower
2 Tbsp olive oil
1 taco or fajita seasoning packet
1 jalapeno, sliced
1 cup shredded cheese
1/2 cup corn
1/2 cup black beans
1 cup lettuce
1 Tbsp salsa
1 avocado
1 Tbsp sourcream
Directions
Preheat oven to 425F (218C).
Chop cauliflower into florets.
Toss cauliflower in olive oil and season with taco or fajita seasoning. Making sure all cauliflower is coated.
Bake for 30-40 minutes, turning halfway through until the edges are charred.
Remove from oven and put onto pan or plate.
Add corn, black beans and cheese. Microwave for 1 minute to melt cheese.
Top with lettuce, salsa, avocado, sour cream, and Elijah's Xtreme Pineapple-Mango Habanero sauce.
