Ingredients

1 chicken breast

1 cup flour
-
2 Tbsp salt and pepper

1 Tbsp cayenne

Oil, for frying

Elijah's Xtreme Regret Hot Sauce

Thick cut sourdough/white bread

Mayonaise
-
1 Tbsp garlic salt
-
2 slices pepper jack
-
2 slices mild cheddar
-
1/2 cup shredded mozzarella
-
1/4 diced jalapeno (optional)

Ranch dressing
-
1 cup shredded cheese blend
-
Lettuce, tomato, and ranch (for topping)
Directions
Chop chicken breast into strips. Coat in flour, cayenne, and salt & pepper. Fry in the oil until golden brown. Once cooked, cut chicken into small squares and toss in Elijah’s Xtreme Regret Hot Sauce until every chicken cube is coated. Set aside.
Toast bread prior to building melt so it doesn’t collapse or become too soggy. Spread mayo and garlic salt on both sides of the bread.
Place 2 slices of pepper jack on one side and 2 slices of mild cheddar on the other side.
On one side place chopped chicken, shredded mozzarella, diced jalapeno, and ranch dressing.
Using a nonstick griddle, place two small piles of cheese the length of the bread about 1 inch from each other.
Slowly place your bread slices over each pile and allow the crust to form. About 5-7 minutes on medium heat.
Once crust has formed, pour some water on the griddle and put a lid/pot over it to create MELTIFICATION. About 2-3 minutes.
Take the lid off and close the sandwich. Allow everything to set and continue to melt on the griddle for about 5 more minutes.
Take off griddle and open the sandwich. Throw in some lettuce, tomato, and more ranch. Close sandwich.
Cut down the middle and enjoy!
